“I liked these, they’re not too sweet & although the chocolate is quite bitter, they still feel like a treat if avoiding high carbs/ sugar. If you’re used to eating baked goods using alternative ingredients to the traditional, then these aren’t a bad go to for a packet mix. The erythritol does mean they have an odd cooling sensation when eaten, which might not be acceptable for some. The dough is easy to mix, (it seemed a little wet at first but I just needed to give it time to absorb the liquid fully to firm up) although when following their instructions to simply halve the rounded balls once on a baking tray & bake for 10 minutes, I found that they didn’t spread, they just formed domes which were totally raw in the middle, so I flattened them out a bit more & gave them another 5 minutes. The next batch I flattened out to maybe a quarter of the original height (of the ball) & baked for 10 minutes - again they didn’t spread but were cooked in 10 minutes, they do need to be left until cold (or very nearly cold) & they go nicely crispy around the edge & stay a little soft in the middle. Another time I’d probably forgo half of the butter & add a tablespoon of peanut butter instead to give them a touch more flavour.”

All you need is 1 Medium Egg 55g Melted Butter Or vegan alternatives for the eggs and butter Method 1. Pre-heat oven to 180° degrees 2. Place mix in a bowl or food mixer and add the eggs and butter 3. Mix together to form a dough 4. Line a baking tray with parchment paper 5. Divide dough into 10 30g balls 6. Transfer to the baking tray well spaced apart 7. Gently flatten to half height 8. Bake in the oven for 10 minutes 9. Allow to cool completely before transferring to a wire rack Makes 10 Cookies. Suitable for home freezing. Store in an airtight container and consume within 5 days. *Only vegan if additions substituted with vegan alternatives.
