Vegan and gluten free coronation quiche

The official dish of the Coronation is here with a twist. A delicious quiche that's guaranteed to be a winner with everyone – plus it's gluten-free and vegan.

Get ready to celebrate the Coronation with friends, family, neighbours and communities whilst sharing friendship, food and fun.

Ingredients

For the pastry:

• 200g gluten free plain flour

• 100g vegan butter

• 1 tsp xanthan gum

• 4 - 6 tsp of plant milk

For the filling:

• 75g gram flour (also known as chickpea flour)

• 190ml water

• 3 tbsp aquafaba (or chickpea water)

• 1 tbsp nutritional yeast

• 0.5 tsp onion powder

• 0.5 tsp garlic powder

• 1 tbsp tarragon, chopped

• 100g vegan cheese, grated

• 180g spinach, cooked

• 60 broad beans, podded

Method

1. Add the flour and xanthan gum to a mixing bowl.
2. Cut up the vegan butter into cubes and add to the mixing bowl.
3. Rub the vegan butter and flour between your hands until you have a mixture that resembles breadcrumbs.
4. Add the plant milk a few tbsp at a time until the pastry comes together into a ball of dough.
5. Wrap the pastry in cling film and leave to rest for 30 minutes.
6. While the pastry is resting, pre-heat your oven to 150C.
7. Wilt your spinach in a large pan with a splash of water.
8. Once wilted, remove from the pan and leave to cool.
9. Once cold enough to touch, squeeze out all of the liquid.
10. Dust the work surface with flour, put the dough in the middle and sprinkle it with flour.
11. Flour your rolling pin then roll out the pastry into a circle 5cm/2” larger than the quiche tin.
12. Carefully lift it into the tin and push it into the corners and grooves.
13. To cut off the excess pastry, roll the rolling pin over the top of the tin.
14. Prick the bottom of the pasty with a fork.
15. Scrunch up baking paper then place inside the pastry case. Top the baking paper with baking beans.
16. Bake in the oven for 20 minutes or until beginning to go a pale golden colour.
17. Remove the baking paper and baking beans and bake for another 5 minutes until golden.
18. While the pastry case is baking, add the gram flour, onion powder, garlic powder and nutritional yeast into a bowl.
19. Slowly pour in the water, mixing continuously so that there are no lumps.
20. With an electric whisk, whisk the aquafaba in a separate bowl until light and fluffy, holding soft peaks.
21. Fold the aquafaba into the wet mix.
22. Once the pastry case is baked, sprinkle half of the cheese over the base followed by the spinach, broad beans and tarragon.
23. Pour over the gram flour and aquafaba mix then top with the remaining cheese.
24. Bake in the oven at 160C for 30 minutes or until the quiche is golden on top and the middle is set.
25. Enjoy hot or cold.
