Make up a batch of these apricot and almond bars packed with fruit, nuts and seeds for the perfect snack to keep you going throughout the day.
Suitable for Vegetarians
Makes 8 bars
Cook time 30 minutes in fridge to set
- 8 medjool dates
- 80g of dried apricots
- 50g of oats
- 40g of sunflower seeds
- 1 tsp of ground ginger
- 2 tbsp of raw honey
- 50g of flaked almonds
1. Pit the dates and add them to a food processor along with the honey – blend both together until smooth.
2. Roughly chop the dried apricots into small pieces and add them to the food processor along with all the other remaining ingredients. Pulse the blender a few times to combine everything until it forms a sticky mixture.
3. Line a baking tray with greaseproof paper and press the mixture down into it. Place in the fridge for 30 minutes to an hour to firm up, then slice into bars.
