Make up a batch of these apricot and almond snack bars packed with fruit, nuts and seeds for the perfect snack to keep you going throughout the day.
Makes 8 bars
- 8 medjool dates
- 80g of dried apricots
- 50g of oats
- 40g of sunflower seeds
- 1 teaspoon of ground ginger
- 2 tablespoons of raw honey
- 50g of flaked almonds
Pit the dates and add them to a food processor along with the honey – blend both together until smooth. Roughly chop the dried apricots into small pieces and add them to the food processor along with all the other remaining ingredients. Pulse the blender a few times to combine everything until it forms a sticky mixture.
Line a baking tray with greaseproof paper and press the mixture down into it. Place in the fridge for 30 minutes to an hour to firm up, then slice into bars.
