1. Eat them raw
Grated or thinly sliced, raw beetroots taste much sweeter than cooked ones. Don’t forget to peel the thin skin, then add a drizzle of oil and season with sea salt and chilli flakes to enhance the taste.
2. Make beetroot soup
When turned into a ruby-coloured soup, beetroot is especially tasty. Simmer with garlic, onions and spices like cumin, and then blend into a thick soup. Finish off with a swirl of crème fraiche or Greek yogurt.
3. Bake with them
Smoothly blended beetroots make a fantastic baking ingredient. Use them to add a rich flavour and moreish moistness to chocolate cakes and muffins.

4. Blend them into a refreshing smoothie
Combine beetroot, apple and blueberries for a wholesome start to the day. This refreshing drink is loaded with filling fibre and essential nutrients.
5. Toss beetroots into a salad
Whether you prefer them chopped or sliced, beetroots are a must in most salads. Try them cut into cubes with quinoa and cucumber, or liven up a classic carrot, onion and lettuce salad with some earthy beetroot flavour.
6. Roast and season them
Roasting beetroots brings out their mellow, smooth flavour. Season them with paprika, salt and pepper then roast until they are juicy and tender. Serve with red onion, sweet potato and feta or goats cheese.
