Ingredients
- 100g oat flour
- 85g rolled oats
- 2 scoops Vital Proteins Collagen Peptides
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp mixed spice
- 55g chopped walnuts
- 50g raisins
- 75g grated carrots
- 2 large eggs
- 50g clear runny honey
- 1 tsp vanilla essence
- 50g white chocolate
Method
- Preheat the oven to 180 C (fan).
- In a large bowl, mix together the oat flour, rolled oats, collagen, baking powder, cinnamon and mixed spice.
- In a separate bowl, whisk together the eggs, honey and vanilla essence.
- Pour the wet ingredients into the dry, and mix thoroughly.
- Add the chopped walnuts, raisins and grated carrots and mix until evenly distributed.
- You should have a thick mixture which you can roll in your hands.
- Take the mixture and roll it into 8 or 9 balls.
- Lay the balls onto a baking tray lined with parchment paper, and gently press to flatten them slightly.
- Bake for around 15-20 minutes until golden, and remove from the oven, leaving them to cool fully.
- Melt the white chocolate in short bursts in the microwave, or over a pan of boiling water, and drizzle over the cooled cookies.
- Enjoy!
