By the time the turkey has been eaten and the roasted veg has been devoured, there’s often very little room left for a large slice of Christmas pudding with brandy cream.
Instead of chucking out your leftover festive pud, turn it into another delicious dessert like this decadent trifle that’s ideal for indulging in after Christmas Day!

Ingredients
Leftover Christmas pudding
Chopped hazelnuts
Pear and banana puree
Whipped cream
Chocolate
Orange juice (or liquor)
Vanilla Ice cream
Method
Using a large bowl or individual sundae glasses, assemble the Christmas pudding, puree and ice-cream in layers beginning with a layer of Christmas pudding.
Pour over some orange juice or orange liqueur so it soaks through to the bottom of the bowl or glass.
Top the whole thing with whipped cream, chopped hazelnuts and some grated chocolate.
Cover and put the trifle or mini trifles in the fridge to chill.
Serve it up to friends and family on Boxing Day or as an easy but tasty dessert on New Year’s Eve!
