Falafel buddha bowl

  • ½ pack vegan-friendly falafel

  • ¼ cucumber, cut into small chunks

  • 8-10 cherry tomatoes, halved

  • 1 spring onion, sliced
  • Large handful of spinach leaves
  • 1 x serving Eat Water rice *

For the guacamole

  • ½ avocado
  • Juice of ½ lime
  • Pinch of chilli flakes *
  • Pinch of lo-salt & black pepper

For the dressing 

  • 1 tablespoon tahini *
  • Juice of ½ lemon
  • ¼ teaspoon cumin *
  • Pinch of lo-salt & black pepper
  • Fresh parsley leaves

Step 1
Bake the falafel according to packet instructions.

Step 2
Prepare the rice according to packet instructions then drain.

Step 3
Arrange the spinach, cherry tomatoes, cucumber, spring onions and drained rice in a serving dish or bowl.

Step 4
Mash the avocado with the lime juice and chilli flakes then spoon in the middle.

Step 5
Whisk together the dressing ingredients and a little water to achieve the right consistency (not too thick or runny).

Step 6
Finally, arrange the falafel on top, drizzle over the sauce and scatter over some fresh parsley leaves. Now enjoy!
