Ingredients
- 2 spring onions, chopped
- ½ red pepper, sliced
- Handful sugarsnap peas
- Large handful spinach leaves
- 1 small chilli, sliced
- 1 serving of Eat Water noodles
For the dressing:
- 2 tbsp coconut milk
- Juice of 1 lime
- 1 tsp maple syrup
- 1 tbsp tahini
- 1 tsp tamari or coconut aminos
- Pinch of black pepper
Method
1. Prepare the noodles according to packet instructions then drain.
2. Place all of the prepared vegetables and drained noodles in a large bowl.
3. Whisk together the dressing ingredients until smooth then pour into the bowl and mix well to coat everything.
4. Serve out and enjoy!
