Cauliflower is a delicious vegetable that absorbs any flavour it’s covered in. Niki from Rebel Recipes has created a recipe that pairs cauliflower with turmeric to not only enhance it’s flavour, but to give it an added health boost.

Turmeric is known for it’s health benefits which include aiding in digestion and supporting your body’s immune system.

Ingredients

  • 1 large cauliflower (save the leaves)
  • Salt
  • Pepper
  • Fresh Coriander
  • 1 tbsp olive oil

Dressing:

Method

  1. Preheat the oven to 180°C degrees (gas mark 4).
  2. Mix the dressing ingredients on a bowl and set aside.
  3. Remove the cauliflower leaves and set aside onto a baking tray.
  4. Cut the cauliflower into pieces and place on to a large baking tray. Coat the cauliflower thoroughly with the dressing.
  5. Drizzle the cauliflower leaves with the oil, salt and pepper then bake both for approx. 40 – 50 minutes (ovens vary so keep an eye on the cauliflower – it should be crispy on the outside and soft in the middle.)

We love how versatile this cauliflower recipe is. Either add it to any main meal, or switch it out with a starchy vegetable such as potatoes for a low-card alternative.
