Tofu and shitake mushroom pad Thai
Pad Thai is a traditional dish from Thailand, combining thick noodles and a signature sauce. Try out this tasty tofu and shitake mushroom pad Thai.
Ingredients
- 40ml low salt soy sauce
- 60ml tamarind paste
- 3 heaped tsp palm sugar
- 2 tbsp groundnut oil
- 2 cloves of garlic, finely chopped
- 1 tsp chilli flakes
- 100g tofu * cubed
- 100g shiitake mushrooms
- 1 egg, beaten
- 100g beansprouts
- 50g salted peanuts, roughly chopped
- Lime wedges, chilli flakes, coriander and extra chopped peanuts to serve

Method
Step 1
Soak the rice noodles in a bowl of cold water for 30 minutes to soften them slightly.
Step 2
In a small pan, gently heat the soy sauces, tamarind and palm sugar until the sugar has dissolved and leave to cool slightly.
