This richly flavoured vegan tomato pesto is made with both green and brown lentils to add texture and depth. Including nutritious lentils also makes this pesto a source of fibre. Including pulses, like lentils in your diet regularly could help you to reach the recommended daily intake of 30g fibre. Fibre takes time to digest, which can help us to feel fuller. So, including fibre containing foods at meal times may help to keep hunger at bay. With two types of tasty tomatoes and 2 different varieties of lentil making up over 50% of its ingredients!
