This richly flavoured vegan tomato pesto is made with both green and brown lentils to add texture and depth. Including nutritious lentils also makes this pesto a source of fibre. “A rich, full-bodied sauce which I slow cooked with diced potatoes. I wasn't expecting the heat from the chilli to be quite as intense but it really made a difference.”
