For the chia base

Step 1

Boil water and steep the tea with chai masala spices for five to seven mins. Take out the bags before stirring in the honey and milk, then allow to cool.

Step 2

In a bowl, mix the oats in with all of the porridge ingredients (except the apple).

Step 3

Pour the mix over the cooled chai tea mixture and stir well.

Step 4

Cover and refrigerate overnight (or at least four hours) so it thickens.

For the kefir step

Step 1

Line a sieve with a J-cloth and place over a bowl. Then strain the kefir through the j cloth and leave to thicken overnight.

Step 2

When kefir has set, stir in the TriActive cocoa powder and set aside.

Step 3

Remove the porridge mixture from the fridge and grate the apple in. Stir well.

Step 4

To serve, spoon a layer of porridge into bowls or jars, top with the cocoa kefir and finish with your favourite toppings.
